Tid Bits

We haven't had too much excitement lately, mostly just hunkering down and enjoying the winter. But I do have some fun pictures, so I thought I'd make a quick post.

I tried a new recipe for parsley pesto with lemon the other day, and it was very nice and fresh tasting. So good, that our fur baby was ready to eat some too!

Oh Baby, Baby, It's a White World

It seems that winter has finally arrived! After a couple weeks of unseasonably warm weather (highs in the 40's and we even got to 50 one day), the snow and cold have returned. I was beginning to be a bit disappointed with winter. Where were the crazy piles of snow everyone was talking about? The horrible cold? The winter fun of snow shoeing and cross country skiing?

Well, for the past few days I got my wish: snow and snow and cold.

Weekly Wonders: Sweet Potato-Cream Cheese Enchiladas

I couldn't think of anything to make for dinner last night. I hate when that happens. So I asked around and people responded with a heavy Mexican theme: tacos, chili, chili tacos (um, ok?). We love Mexican food but we'd already had tacos twice in the past week, so I didn't want to serve them again. But! The suggestions did provide some inspiration and using the sweet potatoes (actually, they're yams, but everyone calls them sweet potatoes) that needed to be cooked and a bit of leftover cream cheese – Voila! A masterpiece. Thanks for all the great suggestions, everyone.
